Project title: POTENTIAL USES OF THE VEGETABLE PRODUCTS FOR FOOD INDUSTRY
Brief description of the project: The aim of this project is to create a study and monitoring network about the different possibilities for food use of by-products generated in the horticultural sector in the Mediterranean basin. The by-products, comes to represent a significant percentage of all harvested, especially in those countries for not having the proper development of post-harvest conservation techniques (refrigeration, controlled atmospheres, etc.)have come in losses up to 50%. The network aims to provide knowledge and assess food resources that the fruit and vegetable by-products can provide with potential beneficial effects in the food industry. Objectives 1. Establishing a network that encompasses different geographical areas of the Mediterranean and therefore different crops and production methods. 2. Characterizing fruit and vegetable production on each area under study. The studies will focus on those that are most important in production volume, or generate greater amounts of by-products or environmental problems. 3. Establishing the possible applications for each crops studied, depend on their composition and content in different compounds. 4. Antimicrobial studies on the major by-products derived from analyzed and their possible applications. 5. Developing a database with products and applications. 6. Strategies for implementing the use of plant products in different areas under study. 7. Establishing workshops and seminars for promotion results
